Breeze Frankfurt - The Wayfarer

Europe has an exciting new addition to its culinary scene; luxury hospitality brand Lebua has made its European debut at the Steigenberger HotelFrankfurt, with its new restaurant, Breeze.

Breeze's menu consists of theatrical Pan-Asian concept dishes that utilise cutting-edge modern culinary techniques, served in an ambient setting, to create a sensual and immersive dinning experience.  Think Heston meets Hakkasan.

Lebua's portfolio of venues also includes hotels and restaurants across New Zealand, India and Thailand, not to mention the world famous Sirocco Sky Bar in Bangkok which was featured last year by USA Today as one of the world’s “Top 10 Most Cutting-Edge Restaurants” and is still my all-time favourite venue.   When I heard about the launch of Breeze in Frankfurt I simply had to check it out.

From the minute you walk down the dimly-lit spiral staircase to Breeze's underground restaurant and are immersed by its atmosphere of ambiance, you will know that you have arrived somewhere very special.  Its sensual interior design is inspired by nature with exposed stone, open water and gigantic blooms of magenta orchids.  There's little wonder why the restaurant's interior is so exceptional, it was designed by Eight Inc, one of the most prestigious global design brands, responsible the famous Apple store on 5th Avenue in New York.

Breeze boasts an exciting line up of chefs including Chef de Cuisine Poon Kam Loong, who has previous worked at Hakkasan and Celebrity Consultant Chef Sam Leong, who is a superstar of the culinary world having published his own book and made a name for himself as a television personality.  The likes of George Bush, Bill Clinton and even our Queen have enjoyed his food so I couldn't wait to experience it for myself.

Stir‐fried Atlantic lobster, crunchy kailan, foie gras sauce

The Chef's Tasting Menu kicked off with a dish of tender lobster which contrasted nicely in texture with the crunchy bed of kailan that it was served on; all perfectly balanced with the rich foie gras sauce.

Black cod, egg white, baby pakchoi, black vinegar

Next up there was a stunning piece of melt-in-the-mouth black cod with a simplistic marinade of black vinegar that brought out the flavour of the fish.

Crispy chicken 'Thai' style, mango, shallot

The delightfully crisp chicken contrasted perfectly with the texture and tanginess of the mango cubes.  A well executed dish that cleverly utilised authentic Thai ingredients and flavours to create something modern and nouvelle.

Wagyu beef tenderloin, mildly spiced green pepper sauce, ginger‐scallion fried rice 

This dish consisted of incredibly tender Wagyu beef with aromatic rice which made the dish satisfying in a way that a lot of nouvelle dishes often are not.

Dehydrated chocolate, Mandarin orange chantilly, Sichuan pepper sorbet, citrus mist

It was out with a bang with a wonderfully theatrical dessert.  Plumes of aromatic mist are formed after a citrus liquid is poured over the dry ice contained below.  The dessert itself had a nice contrast of texture with the dehydrated chocolate shards and the smooth Chantilly and sorbet.

It doesn't just stop at world-class food at Breeze; the cutting-edge cocktail list alone is truly exceptional, as we discovered.  Master mixologist Joao Paulo Feliciano Franco is the brains behind Breeze's show-stopping new cocktails, not to mention the creator of the world famous 'Hangovertini'.  Evidently I spend far too much of my life with a cocktail in my hand so it's not often that I'm really wowed by a cocktail list but both myself and the group of food journalist who I was joined by were all blown away by the cocktails at Breeze.  They get a 10/10 from me.

Cocktail : Bold & Beautiful

Contains : whiskey, lavender, chambord, lemon and cedar wood smoke. These exceptional creations feature flavoured woods burned and smoked using a “Smoking Gun” to produce cocktails that are a special source of indulgence for eyes and palate.  Witnessing the alchemy that the creation of this cocktail requires is a truly captivating and exciting display.  The aromas from the flavoured wood smoke linger, making it a truly sensual cocktail.

Cocktail : Summer Blossom

Contains: gin, cinnamon, peach, grapefruit and chamomile.  Summer Blossom is of of Breeze's 'ice series' cocktails and is as light and refreshing as its name suggests.  The ice series cocktails are devised by freezing flavours in water at -1.9° Celsius and the more the ice melts the more flavourful the cocktail becomes.  It also contains dry ice which produces the mist and must be sipped through a metal straw.

Cocktail : Bombay Chai 

Contains : rum, Grand Marnier, Chai tea and lime. I am a huge fan of anything Chai, in fact a Chai latte is my usual Starbucks order so I absolutely loved this particular cocktail.  It comes with a capsule of Chai flavoured liquid which is to be taken first before sipping on the wonderfully sweet and spicy cocktail which has a frothy head.

Cocktail : Saketini by the Sea

Contains : sake, wasabi, ginger, mango, lime.  This cocktail utilises an infusion of oriental ingredients and its conception was rather oddly drawn from sushi, of all things.  Served in a black sake pot with dry ice mist pouring out of the spout, this cocktail looks as mysterious as it tastes.  It's neither sweet nor savoury, in fact it's pretty difficult to pinpoint exactly what it is but it sure is good.

It wasn't just Breeze's dinner and cocktail menu that I had flown out to Germany to experience but also it's official launch soirée which saw the grand unveiling of Breeze's iconic focal point, the painting of the Lady in Orange, presented by the CEO of Lebua, Deepak Ohari himself.  After chatting to Deepak about what he had envisaged for Breeze's European debut, it was clear that he has really brought his vision for the restaurant to reality.

From the stunning interior design to cutting-edge modern dishes and the elite team of chefs and mixologists,  Breeze is a place at epitomises all things exceptional.  It's definitely one to keen an eye on, from what I've seen I really believe it has the potential to become the big luxury restaurant series.  There's talks of Breeze making its American debut in Philadelphia next year; here's hoping that it's not too long before Breeze finds its way to London and many more cities across the world.
